This recipe is for one of the most tender octopus dishes you can have and make you feel like you are on a Mediterranean beach. My friends are always happy when I cook this octopus dish. It takes time to cook but you will be singing “under the sea~” when the octopus is in your mouth.
Roasted octopus
Ingredients
Serves 3-4
Around 1kg of octopus
A little salt
½ tablespoon chilli powder
2 tablespoons of vinegar
Cloves garlic sliced
1 lemon sliced
Method
- Boil water in a big enough pan for the octopus.
- Put octopus when water boils, add vinegar and cook 35-40min with medium heat.
- While octopus is cooking, preheat oven with 180’c and prepare potatoes (following the recipe)
- After 35-40min, put the drained octopus to an oven tray and slightly cool down.
- Marinate the octopus with chilli powder and a little salt (massaging the octopus) and sliced garlic.
- Put the octopus and the prepared potatoes in separate trays and cook in the preheated oven for 30-35min.
- Squeeze little lemon and fresh coriander before serving, if you like.
Baked Potatoes
Ingredients
Serves 3-4
Around 12 small potatoes
A tablespoon of olive oil
A little salt
Coriander
Rosemary
Thyme
Method
- Boil potatoes for 10min and take out from the water and put on a tray.
- Smash the potatoes with a spoon.
- Marinade with olive oil, salt and herbs.
- Cook in the preheated oven for 35min.
